He’s Done it: a Magazine Made by Pros for Pros.

Yannick Alléno has surprised us once again with his new idea: launching a magazine featuring recipes and reports on the professions “that represent haute cuisine today, with a focus on ingredients.” The magazine also strives to be a source of reflection on the profession’s issues and key techniques of gastronomy (the first issue features a sidebar on sous-vide cooking). The figures: a circulation of 20,000 copies, with 132 pages and 40 recipes, released every 2 months. YAM is also sold at newspaper stands and will undoubtedly appeal to a broad readership at a time when even amateurs  have a keen interest in increasingly refined cuisine. An English version is in the works. YAM is also a web site which you can subscribe to. At only 47 € per year (73€ for the European Union and 111€ for the rest of the world), it’s a must! www.y-a-m.fr
