Maison Borde
WILD MUSHROOM EXPERT
SINCE 1920
A family story
Located since 1920 in Saugues in the Haute-Loire, in the heart of the Margeride, Maison Borde has been managed for three generations by passionate entrepreneurs: Alexandre, Gérard and today Alain Borde.
Proud of its territory, the firm is engaged in a CSR (Corporate Social Responsibility) approach. The company plays an important economic and social role in its region.
A fine product
Maison Borde is the expert in wild mushrooms. Porcini, morels, chanterelles, black trumpets, milky agaric mushrooms, fairy ring mushrooms, grey agarics, shiitake, golden nameko: a very large variety of mushrooms selected for their flavors and their organoleptic qualities. Wonderful treasures of the forests!
Wild by Nature
In many aspects, the wild mushroom is a very specific food product. Its harvesting is closely linked to climatic hazards and its natural environment. Its consumption is still largely influenced by the cultural and culinary heritage of each country and region.
Wild by nature, the mushroom is a fragile and delicate product that requires constant attention, meticulous sorting and real know-how to package it without denaturing it.
Feeling the product is essential
Master in wild mushrooms for more than 100 years, Maison Borde selects in the whole world the most beautiful soils, sorts by hand all the mushrooms and adapts to each variety the most appropriate mode of preservation to keep all the gustative qualities of the product.
The Borde collection: mushrooms in all their forms
The collection is offered in many forms:
- Dehydrated mushrooms
- Appetized mushrooms
- Frozen mushrooms
- Freeze-dried mushrooms
These ranges are available in France and in more than 70 countries around the world.
A recognized expertise
In 2022, a partnership between Maison Borde and Les Maisons Marcon (*** Michelin) led to the creation of the dried mushroom range Les Grandes Origines. Two names, two recognized know-how to select wild mushrooms from the most beautiful soils of France and the world, exclusively dedicated to professionals.
At the same time, a group of experts has created a Mushroom Flavour Wheel. This is a first in this field, and allows us to qualify the dominant aromas of several varieties[1] of mushrooms. More than ever, wild mushrooms are becoming essential ingredients to enhance the chefs' cuisine!
