The Bocuse d’Or Winners are aware of the huge role the commis chef plays in enabling chefs to compete in optimal conditions. Serge Vieira, Bocuse d’Or 2005, said: “The commis chef is the guy or girl who’s going to make you win the contest, and I always say: WE won!” That’s why, with the support of the Rougié company, they created the Best Commis Chef Prize to reward the involvement, efficiency and talent of young members of the candidates’ teams.
