The aura that surrounds the contest and its winners should not conceal the fact that the Bocuse d’Or Winners are still everyday chefs, working in their restaurants and wherever their talent might be required. The following recipes were compiled for the books that we publish. They present them here in the hope that you will enjoy making and sampling them. Most of them are absolutely accessible to (somewhat informed ?) amateur cooks.
